Baked zucchini ala Aaron

Continuing on the food theme…

One of our favourite all time food bloggers – Aaron Lewis, of the Lewis family fame – has recently started a blog dedicated to the art of making side dishes. It’s called Cooking on the Side, and I highly recommend you check it out the next time you need some side dish inspiration.

We recently decided to try out his baked zucchini recipe to go alongside our Lenards chicken schntizel.

There’s an outside-and-yet-surprisingly-good chance that the schnitzel was somewhat overcooked, though this cannot be blamed on the baked zucchini recipe; however if you’d like to blame the tried-his-hand-at-multitasking-and-failed chef, that would be fair enough.

I fully agree with Aaron’s score of 4 out of 5 – they were delicious, but I’d be lying if I said I wasn’t a bit sick of the taste by the end of them.

Oh, yes. There is only so much zucchini one man can consume in a sitting. I opt just for a zucchini half with two half oven baked tomatoes on the side. Cook in the same time, and really detracts from the ‘zucchininess’ of the meal (I’m not sure that’s a word – but if it’s not it should be – we need it).

PS. Thanks for potentially having burnt your schnitzel… it’s going to make me feel so much better about posting the pic of the broccoli side I nuked last night.
